Quesadillas, Giant Cookies and More!

July is officially here! 😱
Lockdown is relaxing here but life is still not back to normal. I'm still working from home and so making the most of my time here. This week, it rained a lot so our food became warmer and spicier. Coming up in today's post, all the happenings from this week including:
- cheese scones
- Chinese food
- so many quesadillas
- a huge pot of quick saag
- giant cookies
- cooking fried rice outside on the deck
- grilled croissants
- strawberry sugar syrup
- and so much more!
As you can tell, I am making the most of being at home by filling my days with lots of activities. 😄

Monday 29 June 1:55pm It was grey all day today with lots of rain. I enjoyed it - a refreshing change after the heatwave last week.

2:38pm Loving these lentil chips at the moment!

4:03pm Baking cheese scones for Mum.

4:05pm Whilst she cooked okra curry for us.

4:37pm Slicing watermelon and mangoes. I like to peel the mangoes with a vegetable peeler then slice into cubes.

4:40pm The cheese scones are baked!

5:43pm With jalapeno cream cheese and pickle.

7:42pm Dinner time! Okra curry and fresh roti. Roti is always best fresh.

8:02pm Winding down after a long day. ✨

2:42pm Blistering green beans for lunch.

2:55pm Until they look like this!

3:06pm I cooked my version of Sichuan dry fried green beans with lamb mince. I love eating this with rice.

3:32pm I had potatoes to use up so I made this Chinese potato salad.

3:39pm Lunch! Leftovers with the two dishes I cooked.

4:21pm It's sweetcorn season!

4:36pm I made a batch of pico de gallo with tomatoes, onion, lime juice, chillies, salt, coriander.

6:29pm Ingredients out to cook chicken for quesadillas. My original recipe is here but today I went for a Korean Mexican mash-up. I cooked the chicken with soy sauce, tomato ketchup, hoisin sauce, sesame oil, Korean chilli paste, ginger, garlic, onion, spring onion and chillies.

6:54pm Ingredients out to make a sweetcorn salad - grilled sweetcorn, spring onions, lime juice, chillies, salt, red chilli powder and mayo. Add everything to your own taste because you know what you like best!

6:58pm Dinner prep in full swing.

7:07pm The chicken for the quesadillas is ready. Basically I was originally going to cook this but then watched this and decided to mix the two recipes together and make quesadillas instead. Crazy how the brain works, isn't it? 🌚

7:19pm We are ready to make quesadillas. 😎

7:19pm Here is the finished sweetcorn salad, by the way.

7:30pm Dinner time! Korean chicken quesadillas, sweetcorn salad, pico de gallo salsa.

Wednesday 1 July 5:07pm Mango milkshake number 675332277 of the Summer!

7:05pm My Mum cooked today, She's calling this her Supreme Lamb Chop Curry and you can find the full recipe here.

7:46pm I baked my quesadillas today. Brush a tortilla with oil, turn it over, add toppings, fold over and bake at Gas Mark 6 for 10 minutes or until crispy.

Thursday 2 July 1:57pm Pounding (or should I say plodding) the alley ways with this one.

3:42pm Roasted almonds for the snack win today.

6:39pm Ordered my first set of metal straws today. I bought them here.

7:44pm Cold drinks taste even colder with metal straws. 😍

7:44pm This was dinner. Chicken kimchi fried rice and mango for dessert.

Friday 3 July 2:23pm It rained all day today.

3:40pm Toasted sesame seeds going into their jar.

3:54pm A pot of Saag bubbling away.

4:04pm I'm baking after ages! 😱

4:21pm Ginger and garlic being pounded for the Saag.

4:48pm Giant cookies ready to be baked.

4:55pm Quesadillas being assembled. These had jalapeno cream cheese, cooked chicken, tomato ketchup, pickled jalapenos and cheese.

5:04pm So yummy!

5:19pm The chocolate chunk cookie with flaky sea salt is ready. I used this recipe.

5:21pm This is a chewy ginger honey cookies which needed to bake further. Recipe is here!

6:22pm The smell of ginger, garlic and green chillies frying means Saag is on the menu tonight.

7:11pm It's ready!

7:14pm Delicious with bread.

7:30pm Or fresh wholemeal roti.

7:31pm A very tasty Friday night. 🇵🇰

Saturday 4 July 2:30pm Cooking chicken kimchi fried rice outside because it was too hot in the kitchen.

2:36pm I fried onion then added chopped kimchi and green chilli. Next, in went cooked chicken, hoisin sauce and soy sauce. I fried it until it was sizzling nicely.

2:45pm I added cooked rice, a splash of water and black pepper. I fried it until I was happy then added toasted sesame oil, more pepper and vegetarian oyster sauce. Topped with grated Mozzarella and popped on the lid.

2:48pm It's ready! Not a traditional recipe but it's how I like it. 😎

2:48pm Eaten straight from the pan with an iced Coke Zero.

7:51pm I defrosted raw croissants. They were bought here.

8:12pm The croissants went into the electric grill.

8:19pm Until toasted and crispy.

8:25pm Topped with vanilla ice cream, ground cinnamon and maple syrup.

8:28pm Such a good combination! 

Sunday 5 July 1:42pm Mum cooked her moong and masoor daal today.

2:32pm Sunday drives in the Lancashire hills.

3:23pm Prepping fruit for the week ahead. I sliced the melon and pineapple ready to go in the fridge.

3:52pm The strawberries were very sour.

4:03pm I weighed them and added half their weight in sugar.

4:37pm Pulsed in a blender and bottled to use in drinks this week.

5:02pm My kebab and chips sizzler for dinner. The recipe is here.

5:05pm Serve with jalapeno mayo (chopped pickled jalapenos + mayo + ketchup + juice from the pickle jar) and iced Irn Bru because it's spicy.
