Eid Al-Adha 2018!

Assalamu alaikum wa rahmatullahi wa barakatuhu!

Happy Eid week!
I hope you've had a good one. We celebrated our actual Eid Al-Adha on Wednesday 22 August but had lots of get-togethers and baking sessions in the days before and after. Here's what was on the menu throughout this week:

Poppadoms
Beef, Potato and Pea Samosas
Tandoori Chicken and Vegetable Spring Rolls

Chicken Tikka Masala
Mixed Butter Daal
Masala Roast Lamb Leg with Vegetables

Boiled Rice
Chickpea Pulao
Green Yoghurt Chutney

Lemon Posset with Berries
Crack Pie
Brown Butter Chocolate Chip Cookies
Chocolate Pudding
Strawberry Cream Cupcakes
Rainbow Ice Cream Sandwiches

Let me show you everything in more detail:
 
We started prepping food on Monday. Here is the crack pie ready to go into the oven.
Baked! I let it cool at room temperature for 2 hours then threw it into the fridge until Eid. I used this recipe!
I also made a batch of brown butter chocolate chip cookie dough.
It needed to chill before baking so I thought I would let it go overnight in the fridge.

On Tuesday morning, I baked the cookies to enjoy with morning coffee. I used this recipe!
On Tuesday, I had my cousins over for a pre-Eid lunch. My niece got her hands on my plastic measuring spoons and insisted on using them to drink water.
Poppadoms to start! My cousin and aunt eat gluten-free so these were perfect for them.
For the rest of us, there were also beef samosas to start with and chicken veggie spring rolls.
For the main course, I cooked chicken tikka masala.
My mum made a mixed butter daal. She used different types of lentils and plenty of butter in this extra special lentil curry.
Fluffy boiled rice to eat the curries with!
It was quite a muggy day here on Tuesday and my niece was desperate to spend as much time outside in the cool garden.
Thankfully, I had made a cold dessert.
My lemon posset! I mixed berries with a little sugar and let them macerate before spooning them over the creamy posset.

 Finally, Eid day itself!
First job? Putting the masala roast lamb with potatoes, onions and carrots in to bake.
Next, whisk up the easiest chocolate pudding and divide it up between pots and ramekins to set and cool in the fridge.
Once cold, I piped on a little whipped cream on top and finished with raspberries.
Guys, these were so good. Like a cross between a chocolate mousse and Angel Delight. Definitely one to share with you all soon!
I also baked cupcakes using this strawberry cake recipe. Once cool, they were finished with cream and berries too.
A platter of crispy beef samosas and chicken spring rolls ready to serve.
After baking for 2 hours and 30 minutes, the lamb was finally done. I sprinkled fresh coriander over it and served in a large dish.
On the side, freshly made chickpea pulao.
For dessert, gooey crack pie!
2 years and 1 week old! 😍

On Thursday, our Qurbani (sacrifice) arrived from the butcher. This was an entire sheep ready to be divided, bagged up, and distributed among family and friends.

On Friday, my nieces came for a bake session.
We made rainbow no-machine ice cream.
Trays and trays of sprinkle chocolate chip cookies.
Perfect for rainbow ice cream sandwiches!
