Current Favourites #10: Vegetarian Week and More!

Guys, I did it!
I did an entire 5 days meat-free and actually enjoyed it! No one in the house thought I could do it and I suppose that is what spurred me on more than anything else. Monday to Friday was vegetarian and then the weekend was meat-central. What did I learn with this vegetarian business? Well, I found myself being more creative as I had to make the vegetables the star of all my recipes. Plus the break from meat made me enjoy my chicken biryani even more than usual on Saturday!

Here's more of my favourites:

I made a half batch of my sooji halwa on a cold evening to warm us all up. 
I also used the same recipe for my take on a besan halwa. The semolina was replaced for gram flour and it turned out pretty well. The gram flour does need cooking out a lot longer than the semolina so be aware of that, if you try the recipe.

I made a huge bowl of my mushroom curry noodle soup with added sweetcorn. Just the thing to finally get rid of my cold!

Dumpling day! These were filled with beef mince, mushrooms, sweetcorn and carrots.

I made crepes! I've made green banana ones before but these were normal ones. However, I did find them too buttery and soft. I'm more interested in finding a recipe for those crispy crepes that I can fill with Nutella and strawberries.

Mushroom egg fried rice for the start of vegetarian week.

I also enjoyed this potato and spinach curry with the rice.

Another veggie meal in the form of vegetable burgers with chickpeas, carrots and sweet potato.

I also enjoyed the another burger with homemade oven chips and spicy omelette.

We enjoyed them with a quick lemon pickle and bowls of steaming daal.

A quick and easy pasta lunch - this is just caramelised butternut squash with cooked pasta and tomato pasta sauce from a jar.

While the rest of the family feasted on spicy fried fish, I enjoyed a green chilli omelette with homemade oven chips and good old beans. We recently tried these low-sugar beans but I much preferred the original.

For Friday's last vegetarian meal, I got a little creative with butternut squash and made it into vegetable seekh kebabs.
On their skewers and fried in butter until golden.
Served with my chana chaat and crispy poppadoms. A lovely end to my vegetarian week!
