Chicken Cheeseburgers.

Happy Wednesday!

It's been a busy one here. I spent the morning shooting a new rice recipe perfect for these colder days. My afternoon was spent hanging out with my mother, cousins, aunt and adorable niece. My cousin baked and decorated a naked floral cake. It was so good with layers of both vanilla and lemon.

Anyway, on to these chicken cheeseburgers. They are up there on the list of my all-time favourite things to eat ever.
We'll make a really simple chicken mince mixture, shape it into patties and fry off until golden brown. Then, we'll place slices of cheese on top of each kebab and let them steam until melted and beautiful.
The cheesy chicken kebabs are sandwiched between soft buns which have been slathered liberally with my favourite ever homemade burger sauce. A few salad things for crunch, some crinkle chips on the side, our favourite drink on ice and dinner is done. I can guarantee these cheeseburgers will get rid of any midweek blues. Enjoy!

A Simple List of Ingredients:

For the Chicken Kebabs:
1. Onion
2. Garlic
3. Green Chilli
4. Vegetable Oil
5. Chicken Mince
6. Salt
7. Black Pepper
8. Crushed Red Chilli Flakes
9. Ground Cumin
10. Breadcrumbs

For the Burger Sauce:
1. Mayonnaise
2. Tomato Ketchup
3. Chilli Garlic Sauce

For the Cheeseburgers:
1. Cheese Slices
2. Burger Buns
3. Cucumber
4. Tomato
5. Lettuce

Bismillah, let's begin!

We're going to start by making the mixture for the chicken kebabs. Take 1 small Onion, 3 Garlic Cloves and 1 large Green Chilli.

Peel the garlic. Peel and roughly chop the onion. Roughly chop the chilli.

Throw them into a blender. I used a stick one.

Pour in 2 tablespoons Vegetable Oil.

Before plugging in the blender ...

... and blending until smooth.

Like so!

Then, into a large mixing bowl, place 1 pound Chicken Mince.

Add in the onion puree.

Then, add in 1 teaspoon Salt.

1/2 teaspoon Black Pepper

1/4 teaspoon Crushed Red Chilli Flakes

1/2 teaspoon Ground Cumin

Feel free to add any other ground spices you like!

Once all the spices are in, begin stirring everything together.

When fully and well mixed in ...

... it's time for the breadcrumbs. I used the dried ones from the supermarket - super easy to use!

The breadcrumbs will help bind the chicken together and stop it from being too sticky. Let's add in 3 tablespoons Breadcrumbs.

A final stir and the mixture is ready! You can add more breadcrumbs if you feel things are too sticky. You can chill the mixture overnight or up to a few hours before using, if you want. I have tried both ways and found that after chilling, it's much easier to handle.

Next, let's make our burger sauce so that it's ready for our burgers. Everything is to taste and here are my measurements.

Grab a bowl and add in 4 tablespoons Mayonnaise.

3 tablespoons Tomato Ketchup

And finally, 1 and 1/2 tablespoons Chilli Garlic Sauce.

Give everything a good stir and then most important of all, taste!

Adjust as needed and then set aside until needed.

Next, let's cook the chicken kebabs.

Place a frying pan over a medium heat and once it's hot, add in a few tablespoons of Vegetable Oil.

Shape the kebab mixture into patties. I like to make medium ones and wear disposable gloves whilst doing so. This mixture should make around 8-9 medium kebabs which I cook in batches.

Cook the kebabs over a medium heat until golden brown and cooked through. By the way, I hadn't chilled the mixture at this point - they look pretty good, right?

Once the kebabs are cooked (should take about 8-10 minutes), switch off the heat but leave them in the pan.

Place a Cheese Slice over each kebab and cover the pan with a tight lid. Leave the pan covered until the cheese has melted - about 5 minutes. You can pop the heat back on if you want things hurried up!


Once the cheese has melted, it's time to assemble the burgers and continue to cook the rest of the chicken mixture. 

For the burgers, take Burger Buns.

You can toast the buns if you wish, but I left them as they were.

Grab your burger sauce.

And, spread it over the buns.

Next, the salad! You can use any you like - I went with Cucumber, Tomato and Lettuce.

On goes the salad!

Finally, the cheesy chicken kebabs.

Add on the kebabs.

And, pop on the lids.

Bake up some crinkle fries. I made frozen ones but wish I'd done homemade ones.

And, pour yourself a drink because it's time to eat!

These cheeseburgers are one of my favourite meals to eat. I love wrapping them up in foil to keep the hot and juicy. Enjoy!

Chicken Cheeseburgers.

Prep Time: About 15 minutes.
Cook Time: About 8-10 minutes per batch.
Serves: Makes about 8-9 medium kebabs for cheeseburgers.

Ingredients

For the Chicken Kebabs
1 small Onion, peeled and roughly chopped
3 Garlic Cloves, peeled
1 large Green Chilli
2 tablespoons Vegetable Oil
1 pound Chicken Mince
1 teaspoon Salt
½ teaspoon Black Pepper
¼ teaspoon Crushed Red Chilli Flakes
½ teaspoon Ground Cumin
3 tablespoons Breadcrumbs
Vegetable Oil, to cook

For the Burger Sauce
4 tablespoons Mayonnaise
3 tablespoons Tomato Ketchup
1 and ½ tablespoon Chilli Garlic Sauce

For the Cheeseburgers
Cheese Slices
Burger Buns
Cucumber
Tomato
Lettuce

To Serve
Fries
Your favourite drink, on ice

Method

First, mix together the chicken kebabs. Place the onion, garlic, green chill and vegetable oil into a blender. Blend until smooth.
Place the chicken mince into a large mixing bowl and add the onion paste, salt, pepper, red chilli and ground cumin. Stir well and add in the breadcrumbs. Stir again and the kebab mixture is ready.
You can chill the mixture in the fridge to help it firm up, if needed.

To make the burger sauce, place the mayonnaise, ketchup and chilli garlic sauce into a bow. Stir and set aside until needed.

To cook the chicken kebabs, heat a frying pan over a medium heat. Once hot, add a few tablespoons of vegetable oil. Shape the kebab mixture into patties – I like to wear disposable gloves and make medium ones.
Cook the kebabs over a medium heat until golden brown and cooked through. This should take around 8-10 minutes.

To make the cheeseburgers, switch the heat off the kebabs but leave them in the pan. Place a cheese slice over each kebab and cover the pan with a tight lid. Let the cheese melt for 5 minutes then remove the kebabs from the pan.

Spread the burger sauce over the buns before assembling with the kebabs and salad. Serve with fries and your favourite drink. Quick tip - I like to wrap my burgers to keep them hot and extra juicy. Enjoy!
