Strawberry Chocolate Chip Cookies

 Already! Hasn't this week flown past? The emergence of a shining sun this morning has prompted my mother to get into full gardening mode, and so pretty soon, I'm about to be dragged outside to help her plant a few late sunflowers and vegetables.
But before that happens, I thought I'd share this cookie recipe with you which I'd previously mentioned here. Strawberries at this time of year aren't fully sweet and strawberry like just yet, and so when a box or two entered my kitchen, I thought I'd bake with them instead.
I'd come across a recipe like this before using white chocolate chips but since I had milk, they went in instead. That's the beauty of making your own baked goods - you can adjust according to what you have.
Anyway, these cookies were really good - so good in fact that we ended up eating them all at home along with a few guests, of course. The tart strawberries were a perfect match for the milky, almost caramel like chocolate and sweet, buttery cookie dough. Give these a go - they make a perfect, summery version of the Chocolate Chip Cookie.

Bismillah, let's begin!

Gather together your ingredients: Strawberries, Plain Flour, White Sugar, Brown Sugar, Baking Powder, Vanilla, Butter, An Egg, Orange and Milk Chocolate Chips.

Get your oven heated to Gas Mark 5 or 190C. Grease and line two baking trays.

Prepare your Strawberries. As you can see, they don't exactly have to be really fresh. These were about a day or two old.

Slice off the tops.

Give them a little rinse under the tap.

Let the water drain away.

On a cutting board or mat, slice them through the middle.

Chop them up into medium sized chunks.

Until you have a bowl full of chopped strawberries. This should be 180g (1 cup) or 6 large strawberries.

Then, remove the zest from a small Orange.

Now, time to make the cookie dough. Use a bowl and a wooden spoon or an electric mixer. I was doing the whole relaxed Sunday baking thing, so decided to go the old fashioned way - but each to his own :)
Anyway, place 75g (1/3 cup) Caster Sugar into the bowl.

Sprinkle in 60g (1/3 cup) Brown Sugar. Both demerara or soft light brown sugar work.

Give both sugars a stir. You may rub in the orange zest at this point too.

To get the creaming process going, we need 113g (1/2 cup) Butter, softened.

Break the butter up a little.

Mine wasn't soft enough so I heated it in the microwave for a few seconds.

Beat everything together well until creamy.

Then, add in the orange zest if you haven't added it yet. You don't have to add this but it does give the cookies a lovely, citrusy back note. 

Pour in 1 teaspoon Vanilla Essence.

And, crack in 1 large Egg.

Mix well once again.

Now, put in 1/2 teaspoon Salt and 1/2 teaspoon Baking Powder.

Now, 250g (1 and 1/2 cups)  Plain Flour.

Once all the flour is in ..

.. start mixing it in.

By hand, this will take longer than if you used a machine, but you'll get there!

Finally, throw in 175g (1 cup) Milk Chocolate Chips and the chopped strawberries from earlier.

Stir them in.

If the mixture is still quite crumbly, get your hands in and combine everything together until they begin to stick to each other.

Using an ice cream scoop, scoop the batter on to the prepared trays.

Pop the tray into the hot oven. Bake at 190C for 12-15 minutes.

Once baked, take them out. Let them sit on the tray for 5 minutes.

Place them carefully on a wire rack to cool.

I baked two trays of cookies, and still had leftover cookie dough.

So, I greased and lined a square cake tin, and popped in the dough.

Press the dough in.

Place into the oven to bake!

Ooh look! The second batch is done :)

And, so are the cookie bars!


Enjoy with tea, coffee or milk - if that's what floats your boat!

Strawberry Chocolate Chip Cookies

Adapted from Laura in the Kitchen 

Ingredients – makes approx 15 cookies

250g (1 and 1/2 cup) Plain Flour

1/2 teaspoon Salt

1/2 teaspoon Baking Powder

1 large Egg

113g (1/2 cup) Butter, softened

75g (1/3 cup) Caster Sugar

1 teaspoon Vanilla Essence

60g (1/3 cup) Soft Light Brown Sugar

175g (1 cup) Milk Chocolate Chips

180g (1 cup) Strawberries, diced - around 6 large

Zest of 1 small Orange

Method

Preheat the oven to 190 degrees C or Gas Mark 5.

Line and grease two baking trays.

Beat together the butter and both sugars.

Add the egg, orange zest and vanilla.

Mix and then add the baking powder, salt and plain flour.

Mix again and add in the chocolate chips and strawberries. 

Use your hands or machine to combine everything and bring it together.

Use a medium ice cream scoop to drop the batter onto the baking tray.

Bake for 17 minutes then allow to cool for 5 minutes. If you mixed it with a machine then bake for about 12-15 minutes.

I baked two trays as cookies and the leftover batter I pressed into a small square cake tin and baked to make cookie bars.
