Summer Gazpacho Soup

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Summer Gazpacho Soup. A gazpacho is a Spanish cold soup that is usually tomato based and contains many fresh vegetables. This soup requires no cooking and is perfect for these hot summer days. It is extremely refreshing and cooling, and so is perfect as a starter for any summer meal, especially for Iftar.

A Simple List of Ingredients:

1. Tomatoes
2. Onions
3. Bell Peppers
4. Cucumber
5. Garlic
6. Chilli Sauce
7. Red Wine Vinegar
8. Olive Oil
9. Salt and Pepper
10. Fresh Parsley
11. Radishes


Bismillah, let's begin!



Place 4 tomatoes which have been roughly chopped into a blender.



Add a peeled and roughly chopped onion.




Add a roughly chopped red bell pepper. Try and use a red one but any other is fine too.



Add a peeled and roughly chopped cucumber



Add 2 peeled and finely chopped garlic cloves.



Blend everything together until smooth.



Next, add 1 teaspoon chilli sauce.



Add 60 ml (1/4 cup) red wine vinegar.




Add 60 ml (1/4 cup) olive oil.



Season with salt and pepper.



Add a small handful of fresh parsley.




Blend again until everything is well combined. If you like the soup to be thinner, then add a little water and blend again. Make sure to check the seasoning too.




Pour the soup into a serving bowl.



Garnish with a little chopped cucumber and radish.



Finally, drizzle on a little olive oil, and serve as a fresh starter.
