Spicy Harissa Drumstick Bake

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Spicy Harissa Drumstick Bake. I made this a few weeks back on a busy weekend, and it was really quick to put together, and then the oven did the rest of the work. The sauce is spicy but by using vegetables such as sweet peppers, butternut squash and red onions, it is calmed down. This recipe is really versatile because you can use any vegetables you have. I think that's what cooking should be - using ingredients you already have!

A Simple List of Ingredients:


1. Chicken Drumsticks
2. Olive Oil
3. Plain Yoghurt
4. Crushed Red Chilli
5. Ground Cumin
6. Salt and Pepper
7. Harissa Paste
8. Sweet Peppers
9. Butternut Squash
10. Red Onion

Bismillah, let's begin!



Take 7 chicken drumsticks. This recipe could be used for whole chicken pieces or with boneless chicken pieces.



Add 4 tablespoons plain yoghurt.



.. 3 teaspoons crushed red chilli ..



.. 2 teaspoons ground cumin ..



.. 1 teaspoon harissa paste ..



.. salt and pepper, to taste ..



Give everything a good stir, and set aside to marinate whilst chopping the vegetables.



Into another bowl, place a handful sweet peppers. You can leave them whole or roughly slice them.



Peel and slice a butternut squash in half. Scoop out the seeds .. 



.. and roughly chop. Add to the peppers.



Peel and roughly chop a red onion.



Add 1 teaspoon harissa paste.



Drizzle in a few tablespoons olive oil.



Season with salt and pepper, to taste.



Add 1 teaspoon crushed red chilli.



Add 1 teaspoon ground cumin.



Stir to combine, and coat all the vegetables.



Place all the vegetables into a large oven dish in a single layer.



Place the marinaded chicken drumsticks on top of the vegetables.
Place into a preheated oven at Gas Mark 7 for 20 minutes.



After 20 minutes, remove from the oven.



Cover the dish with foil, and return to the oven at Gas Mark 7 for 45 minutes or until the chicken is cooked.



The harissa bake is ready!



Serve with a green salad for a yummy lunch.
