Moroccan Lamb Burger Wraps

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Moroccan Lamb Burger Wraps. It consists of Moroccan lamb burgers, a tasty harissa yoghurt dip and grilled red peppers. To serve, it is wrapped in a soft tortilla wrap. This is a different take on burgers and kebabs, and results in a juicy mouthful with every bite.

A Simple List of Ingredients:

1. Onion
2. Garlic
3. Ground Cumin
4. Ground Cinnamon
5. Salt and Pepper
6. Lemon Zest
7. Dried Figs
8. Chickpeas
9. Fresh Green Coriander
10. Lamb Mince
11. Yoghurt
12. Harissa Paste
13. Fresh Lemon
14. Red Bell Pepper
15. Vegetable Oil
16. Tortilla Wraps

Bismillah, let's start!



To make the burgers, place 1 roughly chopped onion and 3 garlic cloves into a food processor.



Add 2 teaspoon ground cumin and 1 teaspoon ground cinnamon.



Season with salt and pepper, to taste, and the zest of 1 lemon.



Add 6 roughly chopped dried figs.



Add 1 tin chickpeas, drained.



Add a handful fresh coriander.



Blend the mixture until combined, and then place the mixture into a large bowl.



Add 1/2 pound lamb mince to the bowl.



Stir to combine well.



Form the mixture into patties, and cook in a little vegetable oil in a grill pan, along with roughly sliced red bell peppers.



Meanwhile, to make the harissa dip, place a few tablespoons yoghurt into a bowl.



Add 1 teaspoon harissa paste.



Season with salt and pepper, and mix in.



Serve garnished with fresh coriander and fresh lemon slices.



Now, to assemble the wraps, take a warm tortilla wrap.



Add a dollop of harissa dip and harissa paste.



Place a burger and piece of red pepper on top.



Fold into a square.



Slice, and serve! Enjoy with crispy fries and more harissa dip!
