Chocolate Chip Shortbread Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Chocolate Chip Shortbread Cookies and Shortbread Cookies. I used a traditional shortbread recipe, and then doubled the mixture to make a chocolate chip version. Shortbread are my favourite biscuit and they couldn't be easier to bake at home.

A Simple List of Ingredients:

1. Plain Flour
2. Cornflour 
3. Butter
4. Caster Sugar
5. Milk Chocolate Chips

Bismillah, let's begin!




Place 8 ounces plain flour in a large bowl.




Add 4 ounces cornflour.




Stir to combine.




Add 8 ounces butter, in cubes.




Rub in with your fingertips.




Add 4 ounces caster sugar.




Stir to combine.




Place half of the mixture on to a surface.




Knead the mixture lightly until it forms a smooth dough. The warmth from your hands will bring the dough together.




Place the dough onto cling film.




Roll into a sausage shape, and wrap in the cling film. Place in the fridge for 1 hour to chill.




With the other half of the mixture ..




Add 1 bag milk chocolate chips.




Stir to combine.




Place onto a surface.




Knead lightly until it forms a smooth dough.




Place onto cling film.




Wrap in the cling film, and roll into a sausage shape. Chill in the fridge for 1 hour.




Preheat the oven to Gas Mark 3.
Slice the shortbread into slices.




Slice the chocolate chip shortbread into slices.




Place onto a lined baking tray.




Bake in a preheated oven at Gas Mark 3 for 35 minutes until pale golden brown.




Cool for 10 minutes on a wire rack.




These buttery biscuits will become a firm family favourite.




They are also great packaged up as gifts for any occasion.
