Roasted Tomato and Chilli Salsa

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Roasted Tomato and Chilli Salsa. It's fresh, juicy and full of flavour. It can be added to fajitas, burritos, nachos or simply enjoyed with a bowlful of My Baked Tortilla Chips.

A Simple List of Ingredients:

1. Tomatoes

2. Green Jalapeno Chillies
3. Garlic
4. Onion
5. Lime Juice
6. Salt

Bismillah, let's begin!




Take a heavy-based pan and heat on a high heat, and add:
4 whole tomatoes
2 green jalapenos
2 unpeeled garlic cloves
1/2 onion, peeled and roughly chopped
You want everything to dry-roast until blackened, blistered and soft. 



Once the onions have been char-grilled, remove them.



Once the peppers and garlic have blackened on all sides, remove them.



The tomatoes will take a little longer than the others, so keep turning them.



Slice the cooked onion, and place into a bowl. If you don't mind raw onion, then you could add it in without cooking it first.



Next, add the sliced cooked jalapenos



Next, add the cooked crushed garlic.



Next, add in the chopped cooked tomatoes.



Next, add 1 chopped fresh jalapeno and 1 chopped fresh tomato. This adds freshness and heat to the salsa. 



Next, add a few splashes of lime juice.



Finally, add a handful of chopped coriander, and salt, to taste



Stir everything together to combine, and store in the fridge until needed.



Serve with My Baked Tortilla Chips!



Roasted Tomato and Chilli Salsa

What You Need

·     4 Whole Tomatoes
·     2 Whole Jalapeno Chillies
·     2 Garlic Cloves, unpeeled
·     ½ Onion, peeled and roughly chopped
·     1 Jalapeno Chilli, chopped
·     1 Tomato, chopped
·     Few splashes of Lime Juice
·     Handful of Fresh Coriander, chopped
·     Salt, to taste

What To Do

1. Take a heavy based pan, and heat on a high heat. Dry roast the whole tomatoes, whole jalapeno chillies, garlic cloves and onion until blackened, blistered and soft.

2. Once all the vegetables are done, remove from the pan, and allow to cool slightly.

3. Then, slice all the vegetables and place into a bowl. Add the sliced fresh jalapenos, tomato, lime juice, fresh coriander and salt, and stir well. Serve the salsa with Baked Tortilla Chips.
