Sticky Madinah Flapjacks

Assalamu alaikum wa rahmatullahi wa barakatuhu!



These flapjacks have been named after the beloved city of our beloved Prophet Muhammad (saw), and that is because they have a secret ingredient. They are packed full of those black jewels which are the dates of Madinatul Munawwarah.
We know that dates were part of the diet of the Prophet Muhammad (saw) and so we should all try and eat more of them, with the intention that we are eating them because they were eaten by him.

A Simple List of Ingredients:

1. Dates
2. Bicarbonate of Soda
3. Butter
4. Light Brown Sugar
5. Golden Syrup
6. Rolled Oats

Bismillah, let's begin!


The first step is to preheat the oven to Gas Mark 3.
Also, grease and line a square cake tin with greaseproof paper.


 The first and most important ingredient in this recipe are the dates. You can use your favourite kind of dates but you will need 7 ounces of chopped stoned dates (that means without the date stone).



 Place the chopped dates into a saucepan and add 1/2 teaspoon of bicarbonate of soda.



 To the saucepan, add enough water to just cover the dates.



 Place the saucepan on a medium heat.



 Simmer the dates for 5 minutes.



 Then drain the water.



 And reserve the liquid in a separate bowl.



 Add 3 tablespoons of the cooking liquid to the dates.



 Using a blender, puree the dates until a paste forms.



Set the date puree aside.



Place 7 ounces of light brown sugar into a large pan.



To the sugar, add 7 ounces of butter.



 And 2 tablespoons of golden syrup.



 Place on a medium heat and keep stirring until the mixture forms a smooth sauce. 



And finally, you will need 10 ounces of rolled oats.

  

Stir the oats into the butter mixture. 



Take half of the oat mixture, and press into a tin.



 Now, take the date puree from earlier, and spread it on top of the oat mixture.




And finally, gently spoon over the remaining oat mixture onto the date puree.





 Bake in the preheated oven Gas Mark 3 for 40 minutes until golden brown.


 Leave the flapjacks to cool in the tin for about 10 minutes, and then slice.



 And serve!
These are best served completely cold so do let them cool down. They are the perfect snack and are also ideal for packed lunches and those unexpected guests. And of course, they are a different way of having a sunnah food!

·     7 ounces (198 grams) Dates, pitted and chopped
·     ½ teaspoon Bicarbonate of Soda
·     Water
·     7 ounces (198 grams) Light Brown Sugar
·     7 ounces (198 grams) Butter
·     2 tablespoons Golden Syrup
·     10 ounces (283 grams) Rolled Oats

Method

1.  Preheat the oven to Gas Mark 3. Grease and line a square baking tin.

2.  Place the dates and bicarbonate of soda into a saucepan. Add enough water to cover the dates.

3.  Place the saucepan on a medium heat, and simmer for 5 minutes.

4.  Drain the dates and reserve the liquid. Add 3 tablespoons of the cooking liquid to the dates and blend until smooth. Set the date puree aside.

5.  Place the brown sugar, butter and golden syrup into a saucepan. Heat on a medium heat, and stir until a smooth sauce is formed.

6.  Add the oats in and stir.

7.  Place half of the oat mixture into the lined tin, and press down. Top with the date puree, and then cover the rest of the oats.

8.  Bake for 40 minutes until golden brown. Slice, allow to cool and serve!
